NV Folktale Brut

The blend began with 85% Chardonnay, which was an equal combination of fruit from Monterey and Mendocino. The fruit from Monterey gave us the same notes of lush tropical fruit and mineral that can be found in our Folktale Chardonnay. The Mendocino fruit gave us some bright citrus notes of lemon and some green apple. The Sauvignon Blanc was also grown in Mendocino. We wanted to add some bright acidity and grapefruit flavors that stood out. The Gewürztraminer from Monterey was the magic ingredient in the blend. Beautiful floral aromas lifted the wine to next level.

We put the blend together in a stainless steel tank and add bubbles through a forced carbonation method. This allows us to control the level of effervescence and achieve the desired texture of the wine. We targeted a softer, less aggressive style that was more like the texture of a prosseco or frizzante wine – perfect for a sunny day in Carmel Valley.

Brilliant in color, the Brut sparkling wine opens with a beautiful yeasty quality, followed by fresh floral and tropical notes, creamsicle, and Meyer lemon. Flavors of stone fruit, almond husk, and a hint of minerality dominate the palate leading to a clean finish.  The Folktale NV Brut is great by itself, or toast to a special occasion.

NV Folktale Rosé Brut

Folktale sparkling wine begins in the vineyard, early. Grapes for sparkling wine have to be picked at a lower sugar level than for our still wines, so we tend to harvest 3 weeks before we begin picking fruit for our still wines. For our first bottling of sparkling wine, we envisioned a wine that was bright, fun to drink, and food friendly.

We put the blend together in a stainless steel tank and add bubbles through a forced carbonation method. This allows us to control the level of effervescence and achieve the desired texture of the wine. 2015 Folktale Rosé

Our estate vineyard nestled in the hills of Carmel Valley had an excellent season in 2015, marking a strong beginning to our story on this property. This is our first harvest of the estate Sangiovese, and we’re thrilled to present this fine wine. Harvest took place on October 5th at an average degrees Brix of 21.8 before being cluster sorted and lightly pressed for four hours. The juice was chilled to 45F for 24 hours and inoculated with VL2 yeast to enhance the varietal aroma. The wine was then fermented in Neutral French Oak for 14 days to soften some of the bright, natural acidity. Once complete, the wine was aged in stainless steel at 40F for three months to preserve the delicate aromatics and fresh, bright flavors.

In the glass, the color is a vibrant rose gold. Subtle aromas of fresh strawberries, watermelon and lavender are presented with floral bouquet undertones. The palate is loaded with luscious strawberry, tropical fruit, and wildflower honey flavors. The Folktale Rosé is a lively wine with vibrant acidity and a refreshing quality. Enjoy this wine on warm afternoons with friends, chilled, and often.

2011 Folktale Riesling

Monterey County

In the mouth, it absolutely grabs you. The fruit is seductive and lush, with rich flavors of dark berries, currants, a little herb, and some nice subtle oak that lingers. The acidity tames the tannins, so the wine is big, but balanced. The mouthfeel is powerful but incredibly smooth. A hint of white pepper spice finishes it off, and the flavors just linger on your palate, opening up and revealing layers of complexity.

2013 Folktale Chardonnay

Monterey County

The vineyards are sustainably farmed and we hand-pick our grapes in half ton bins to ensure the best quality wines. The 2013 vintage enjoyed ideal conditions to produce both quantity and quality. A wet winter led into a dry, warm growing season with consistent temperatures and a long growing season. These ideal conditions resulted in fruit that was complex and well balanced. The wine was fermented in tank, underwent 100% malolactic fermentation then aged in 20% New French Oak for 6 months before bottling.

In the glass, the wine is a bright straw laced with honey. Aromas of tropical fruit, vanilla bean, pear, and apricot invite you in. On the palate, the texture is round and smooth with bright acid. Flavors of pineapple, guava, red apple, buttered toast and banana balance together into a wine that is both rich and refreshing. The Folktale Chardonnay is a diverse wine that will pair perfectly with cream sauces, seafood, and white meats. Enjoy chilled and often.

2014 Folktale Pinot Noir

The vineyards are sustainably farmed and we hand-pick our grapes at an average of 25.1 brix in half ton bins to ensure the best quality wines. The 2014 harvest started earlier than the previous vintages in recent memory, but the growing season was not shortened. The warm winter and spring prompted an early bud break, allowing the fruit plenty of time to mature and develop. These ideal conditions resulted in fruit that was complex and well balanced. Harvest took place in early September. The wine was fermented in tank then aged in 10% New French Oak for 10 months before bottling.

In the glass, the color is deep garnet with flashes of violet. Aromas of plum, dried cherries, and blackberry mingle with tea leaves, black pepper, and jasmine. These notes follow onto the palate. The dark, lively fruit flavors of cherry, raspberry, blackberry, and plum are the stars, but the stage is what makes the impression – a rich backdrop of earth, minerals, floral notes, spice, and a hint of eucalyptus. There is nice acid structure but the overall texture is big, bold, and smooth. The big size of this wine will be ideal for bolder flavors of red meat, sauces, and grilled vegetables, but also beautiful on its own.

2015 Le Mistral Grenache

The name, Le Mistral, comes from the name for the winds of the Rhône Valley in France, where blustery afternoons cool vineyards quickly and produce similar flavors in their native varietals like Syrah and Grenache. We are proud to farm the Le Mistral Vineyard in a sustainable way. This combines the best management practices from other farming systems, like organic and biodynamic, to positively impact the bottom line, environment, and society.

Grapes were harvested October 1-8 at an average of 25.2 ̊ brix and was partially destemmed.  The fruit was cold soaked for 4 days before being fermented in small batch stainless steel tanks for 12-16 days. The Grenache then aged for 9 months in French Oak (18% New) before being bottled on 7/15/16

Dark and delicious on the nose with black cherry, dried herbs, and pepper flavors. With a deep red color and intense character, the palate is spicy with complex layers of dark currant, licorice, red berry and a long, lingering and balanced finish. This wine will pair wonderfully with lamb, beef, or even your favorite barbecue foods.

This combines the best management practices from other farming systems, like organic and biodynamic, to positively impact the bottom line, environment, and society.

An ode to the original blend by Winemaker Joseph Phelps, this Syrah-Grenache is a love letter to Monterey’s unique growing region. The wind that whips through our vines gives this wine its unique flavor and complexity. It opens beautifully with bright notes of cedar and dried tobacco, with warm aromas of saddle leather and vanilla. The palate is lively with tangy flavors of cassis and red fruit, with a beautiful, spicy chocolate finish. This timeless classic is wonderful enjoyed on its own, or paired with steak or lamb.
