NV Folktale Brut

Folktale sparkling wine begins in the vineyard, early. Grapes for sparkling wine have to be picked at a lower sugar level than for our still wines, so we tend to harvest 3 weeks before we begin picking fruit for our still wines. For our first sparkling wine, we envisioned a wine that was bright, fun to drink, and food friendly.

We put the blend together in a stainless steel tank and add bubbles through the crémant method. This allows us to control the level of effervescence and achieve the desired texture of the wine. We targeted a softer, less aggressive style that was more like the texture of a prosseco or frizzante wine – perfect for a sunny day in Carmel Valley.

Light and refreshing, we made our Brut to enjoy on its own or paired with- well, just about anything. This sparkling wine opens with notes of green apple, banana, and tropical kiwi, developing into flavors of peach and tart strawberry on the palate. Enjoy chilled and often.

Yes way, Rosé. Our Non-Vintage Sparkling Rosé was made using the Charmat method and the best of Monterey County Pinot Noir and Chardonnay. The rising bubbles bring forth mouth-watering notes of strawberry, kiwi, watermelon, followed by rich flavors or red grapefruit and tangerine. There’s a delicate yeasty quality, balanced by the sweet fruit flavors and bright, clean acidity. Perfect for a day at the beach, enjoy chilled and often.

2016 Folktale Rosé

Monterey County

2016 saw a light harvest here at the estate due to drought and fire conditions, so this year we’ve supplemented our Estate Sangiovese with Pinot Noir from the nearby Santa Lucia Highlands. The fruit was lightly pressed for two hours before being settled for twenty-four hours at 50 degrees. The juice was then fermented in barrel with VL2 yeast to highlight the texture, structure, and mouth-feel of this delicate wine. The wine aged in barrel for 3 months before being blended and bottled in early January.

Our 2016 Monterey County Rosé opens with bright, lively notes of tart strawberry, pink grapefruit, and honeydew melon, with a hint of rose petals and dried wildflowers. This wine is summertime in a bottle- zippy, light, and refreshing, perfect for a picnic or a day at the beach.

2016 Folktale Chardonnay

Arroyo Seco

Monterey County has a way of bringing out the best in Chardonnay, consistently providing us with elegant and complex fruit, thanks to the unique terroir of the region. Like past vintages, tropical notes take the stage with notes of mango, banana, and dried apricot, along with hints of kiwi, rich minerality, and the warmth of buttered brioche toast. Enjoy chilled with your favorite seafood dishes.

2015 Folktale Pinot Noir

Monterey County

This vintage, we really wanted to make a wine that captures the true fruit expression of Pinot Noir grown in the Monterey County. We harvested fruit from the three ranches near the end of September, hand sorted the fruit three times, and cold soaked the grapes for 48 hours. We allowed 100% spontaneous native fermentation, which really allows the true nature of this fruit to shine. After first fermentation, the batch was pressed and put into neutral French oak barrels where spontaneous malolactic fermentation took place.

This Pinot Noir is the essence of the Arroyo Seco in a bottle. Its rich and complex characters should be given an opportunity to open up by swirling in the glass or decanting. Rich mineral notes begin the bouquet with slate and graphite, soon opening to rich notes of black cherry, cola, and soft earth. Hints of light black pepper, leather, and vanilla balance everything out. On the palate, bright and lively acid is balanced by a nice minerality, leading to a long, rich finish. This wine is exceptional on its own, or paired with your favorite hard rind cheese, mushroom dish, or dark chocolate.

2016 Le Mistral Viognier

Happy Canyon of Santa Barbara

Grapes were harvested in September at an average of 23.4 brix and were immedietly pressed. The juice was chilled for 24 hours before being partially transfered to tank (67%) and neutral French Oak barrels (33%) for fermentation. After fermenting for 10 days, the wine was racked and continued to age in tank and barrels until blending just before bottling. The wine was bottled 1/19/17.

The Le Mistral Viognier is aromatic and delicate, soft and smooth, vibrant and memorable. The bouquet is floral and complex; honeysuckle and rose petal dominate with lighter notes of vanilla, apricot, apple blossom and wildflowers. With a silky texture and a long, lingering finish, this Viognier is best enjoyed slightly chilled with good friends.

2016 Le Mistral Rosé of Grenache

Arroyo Seco

Grapes were harvested October 18th at an average of 26.4 brix and were partially destemmed. The fruit was cold soaked for 24 hours before being drained into 4 neutral French Oak barrels for fermentation. After the wine finished its fermentation, the wine was racked and aged in the same barrels for 3 months before being bottled on 7/15/16.

This 100% barrel fermented Rosé of Grenache is beautifully vivacious. Notes of watermelon and sweet cherry open, followed by light notes of tropical fruit, pear, and soft vanilla toast balance the big fruit flavors. Lively acid and light minerality add depth and complexity. We believe Grenache grows beautifully in Monterey County, and this wine strengthens that belief.

2015 Le Mistral Grenache

The name, Le Mistral, comes from the name for the winds of the Rhône Valley in France, where blustery afternoons cool vineyards quickly and produce similar flavors in their native varietals like Syrah and Grenache. We are proud to farm the Le Mistral Vineyard in a sustainable way. This combines the best management practices from other farming systems, like organic and biodynamic, to positively impact the bottom line, environment, and society.

Grapes were harvested October 1-8 at an average of 25.2 ̊ brix and was partially destemmed.  The fruit was cold soaked for 4 days before being fermented in small batch stainless steel tanks for 12-16 days. The Grenache then aged for 9 months in French Oak (18% New) before being bottled on 7/15/16

Dark and delicious on the nose with black cherry, dried herbs, and pepper flavors. With a deep red color and intense character, the palate is spicy with complex layers of dark currant, licorice, red berry and a long, lingering and balanced finish. This wine will pair wonderfully with lamb, beef, or even your favorite barbecue foods.

Another excellent vintage, this year’s Joseph’s Blend may be our favorite yet. A gorgeous ruby color in the glass, the bouquet opens with notes of dark currant, bay leaf, blackberry, clove, and anise, which evokes a feeling of holiday evenings by a fireplace. The palate is rich with flavors of white pepper, vanilla, toast, and a hint of cured meat. The richness of the palate elevates the tannins on the finish, creating a lasting, memorable experience. This wine is sturdy enough to pair excellently with your favorite barbecue, and elegant enough to enjoy on its own.
