NV Folktale Brut

The blend began with 85% Chardonnay, which was an equal combination of fruit from Monterey and Mendocino. The fruit from Monterey gave us the same notes of lush tropical fruit and mineral that can be found in our Folktale Chardonnay. The Mendocino fruit gave us some bright citrus notes of lemon and some green apple. The Sauvignon Blanc was also grown in Mendocino. We wanted to add some bright acidity and grapefruit flavors that stood out. The Gewürztraminer from Monterey was the magic ingredient in the blend. Beautiful floral aromas lifted the wine to next level.

We put the blend together in a stainless steel tank and add bubbles through the charmat method. This allows us to control the level of effervescence and achieve the desired texture of the wine. We targeted a softer, less aggressive style that was more like the texture of a prosseco or frizzante wine – perfect for a sunny day in Carmel Valley.

Brilliant in color, the Brut sparkling wine opens with a beautiful yeasty quality, followed by fresh floral and tropical notes, creamsicle, and Meyer lemon. Flavors of stone fruit, almond husk, and a hint of minerality dominate the palate leading to a clean finish.  The Folktale NV Brut is great by itself, or toast to a special occasion.

NV Folktale Rosé Brut

Folktale sparkling wine begins in the vineyard, early. Grapes for sparkling wine have to be picked at a lower sugar level than for our still wines, so we tend to harvest 3 weeks before we begin picking fruit for our still wines. For our first bottling of sparkling wine, we envisioned a wine that was bright, fun to drink, and food friendly.

We put the blend together in a stainless steel tank and add bubbles through the charmat method. This allows us to control the level of effervescence and achieve the desired texture of the wine. 2016 Folktale Rosé

Monterey County

2016 saw a light harvest here at the estate due to drought and fire conditions, so this year we’ve supplemented our Estate Sangiovese with Pinot Noir from the nearby Santa Lucia Highlands. The fruit was lightly pressed for two hours before being settled for twenty-four hours at 50 degrees. The juice was then fermented in barrel with VL2 yeast to highlight the texture, structure, and mouth-feel of this delicate wine. The wine aged in barrel for 3 months before being blended and bottled in early January.

Our 2016 Monterey County Rosé opens with bright, lively notes of tart strawberry, pink grapefruit, and honeydew melon, with a hint of rose petals and dried wildflowers. This wine is summertime in a bottle- zippy, light, and refreshing, perfect for a picnic or a day at the beach.

2015 Folktale Chardonnay

The vineyard is sustainably farmed, SIP-Certified, and we hand-pick our grapes in half ton bins to ensure the best quality wine. The wine was fermented in tank, underwent 100% malolactic fermentation then aged in 20% new French Oak for 6 months before bottling.

Our 2015 Chardonnay is rich and well balanced. Toasted marshmallow, light butterscotch, and soft notes of tropical fruit like pineapple, guava, and banana. These notes come together to create a palate with flavors of sweet cream, vanilla, and buttery toast, balanced with a lively acid and rich minerality. The Folktale Chardonnay is a diverse wine that will pair perfectly with cream sauces, seafood, and white meats. Enjoy chilled and often.

2014 Folktale Pinot Noir

Monterey County

The vineyards are sustainably farmed and we hand-pick our grapes at an average of 25.1 brix in half ton bins to ensure the best quality wines. The 2014 harvest started earlier than the previous vintages in recent memory, but the growing season was not shortened. The warm winter and spring prompted an early bud break, allowing the fruit plenty of time to mature and develop. These ideal conditions resulted in fruit that was complex and well balanced. Harvest took place in early September. The wine was fermented in tank then aged in 10% New French Oak for 10 months before bottling.

In the glass, the color is deep garnet with flashes of violet. Aromas of plum, dried cherries, and blackberry mingle with tea leaves, black pepper, and jasmine. These notes follow onto the palate. The dark, lively fruit flavors of cherry, raspberry, blackberry, and plum are the stars, but the stage is what makes the impression – a rich backdrop of earth, minerals, floral notes, spice, and a hint of eucalyptus. There is nice acid structure but the overall texture is big, bold, and smooth. The big size of this wine will be ideal for bolder flavors of red meat, sauces, and grilled vegetables, but also beautiful on its own.

2016 Le Mistral Viognier

Happy Canyon of Santa Barbara

Grapes were harvested in September at an average of 23.4 brix and were immedietly pressed. The juice was chilled for 24 hours before being partially transfered to tank (67%) and neutral French Oak barrels (33%) for fermentation. After fermenting for 10 days, the wine was racked and continued to age in tank and barrels until blending just before bottling. The wine was bottled 1/19/17.

The Le Mistral Viognier is aromatic and delicate, soft and smooth, vibrant and memorable. The bouquet is floral and complex; honeysuckle and rose petal dominate with lighter notes of vanilla, apricot, apple blossom and wildflowers. With a silky texture and a long, lingering finish, this Viognier is best enjoyed slightly chilled with good friends.

2016 Le Mistral Rosé of Grenache

Arroyo Seco

Grapes were harvested October 18th at an average of 26.4 brix and were partially destemmed. The fruit was cold soaked for 24 hours before being drained into 4 neutral French Oak barrels for fermentation. After the wine finished its fermentation, the wine was racked and aged in the same barrels for 3 months before being bottled on 7/15/16.

This 100% barrel fermented Rosé of Grenache is beautifully vivacious. Notes of watermelon and sweet cherry open, followed by light notes of tropical fruit, pear, and soft vanilla toast balance the big fruit flavors. Lively acid and light minerality add depth and complexity. We believe Grenache grows beautifully in Monterey County, and this wine strengthens that belief.

2015 Le Mistral Grenache

The name, Le Mistral, comes from the name for the winds of the Rhône Valley in France, where blustery afternoons cool vineyards quickly and produce similar flavors in their native varietals like Syrah and Grenache. We are proud to farm the Le Mistral Vineyard in a sustainable way. This combines the best management practices from other farming systems, like organic and biodynamic, to positively impact the bottom line, environment, and society.

Grapes were harvested October 1-8 at an average of 25.2 ̊ brix and was partially destemmed.  The fruit was cold soaked for 4 days before being fermented in small batch stainless steel tanks for 12-16 days. The Grenache then aged for 9 months in French Oak (18% New) before being bottled on 7/15/16

Dark and delicious on the nose with black cherry, dried herbs, and pepper flavors. With a deep red color and intense character, the palate is spicy with complex layers of dark currant, licorice, red berry and a long, lingering and balanced finish. This wine will pair wonderfully with lamb, beef, or even your favorite barbecue foods.

An ode to the original blend by Winemaker Joseph Phelps, this Syrah-Grenache is a love letter to Monterey’s unique growing region. The wind that whips through our vines gives this wine its unique flavor and complexity. It opens beautifully with bright notes of cedar and dried tobacco, with warm aromas of saddle leather and vanilla. The palate is lively with tangy flavors of cassis and red fruit, with a beautiful, spicy chocolate finish. This timeless classic is wonderful enjoyed on its own, or paired with steak or lamb.
